What is Shiitake (Lentinus edodes)?

Shiitake is an edible mushroom that naturally grows on dead or dying hardwood trees, particularly chestnuts, oaks, and beeches, in the mountainous regions of East Asia. The mushroom has a characteristic brown cap with white scales and a robust, aromatic flavor. The Japanese name “Shiitake” is a combination of “shii” (a type of chestnut tree) and “take” (mushroom).

Shiitake has a long history in traditional Chinese and Japanese medicine and has been cultivated for more than 1000 years. In Japan, Shiitake was historically seen as a gift for emperors and was highly valued for its nutritional value and unique composition.
