All mushrooms are organically certified according to EU standards (CN-BIO-141 and NL-BIO-01), guaranteed free from heavy metals and pesticides (tested on 500+ items), and are regularly analyzed by independent laboratories. We exclusively use hot water extracts of the fruiting body (no mycelium on grain), with the exception of Cordyceps where we use mycelium biomass grown on organic bean meal.

Mushrooms contain hundreds of bioactive components, including all essential amino acids, vitamins, minerals, and trace elements. The protein content varies between 10-40% of dry weight. The main groups of bioactive substances are:

Beta-glucans and polysaccharides: Complex sugar chains that determine the structural strength of mushrooms. Our mushrooms contain guaranteed percentages measured with the Megazyme test kit K-YBGL: Reishi (≥45%), Maitake (≥30%), Shiitake (≥28%), Lion's Mane (≥25%), Chaga (≥8%).

Triterpenoids: More than 100 different compounds that give mushrooms their bitter taste, especially prominent in Reishi and Chaga.

Ergosterol (provitamin D2): Converted into vitamin D2 under the influence of sunlight.

Arabinoxylans and glycoproteins: Complex combinations of proteins and polysaccharides, particularly rich in Cordyceps (240 mg/g arabinoxylans, 322 mg/g glycoproteins).

Cordycepin and adenosine: Unique nucleosides specifically present in Cordyceps sinensis (≥0.25% adenosine guaranteed), chemically related to DNA and RNA building blocks.

Paul Klein Breteler, founder of Kala Health, explains: "Polysaccharides are branched sugar chains that give mushrooms their strength. These structures are comparable to the polysaccharide capsules around bacteria. The immune system has specific cells called macrophages that are targeted at these polysaccharide structures via a key-lock mechanism."

"When you consume mushrooms, your body breaks down the polysaccharides into smaller fragments. These come into contact with macrophages. If a fragment fits as a 'key' into the 'lock' of a macrophage, this can activate the macrophage. The activated macrophage then releases substances such as interferon and interleukins."

This scientific explanation illustrates the importance of high-quality extraction methods and guaranteed polysaccharide percentages. In November 2003, the International Journal of Medicinal Mushrooms published important research on active ingredients of mushroom mycelia (Stamets, 2003), which demonstrated that various mushrooms are rich sources of these bioactive substances.

FSSC-22000 (Food Safety System Certification) is the highest international standard for food safety and quality management. This means that our entire production chain – from receipt of the organic extracts to encapsulation, packaging, and distribution – meets the strictest requirements for hygiene, traceability, and quality control.

Mushrooms can absorb and convert almost all substances from their environment – both valuable and harmful. Mushrooms from polluted areas can contain contaminants such as heavy metals and pesticides. This is a crucial quality aspect that Kala Health places great importance on. Many cheaper mushroom products on the market contain mycelium grown on grain substrates (such as rice or oats). The problem: the mycelium grows through the grain and cannot be completely separated from it. The end product often contains more starch than mushroom material, with lower percentages of the desired bioactive substances.

Kala Health uses hot water extracts of the fruiting body (except for Cordyceps, see next question). The fruiting body is the above-ground part of the mushroom that we recognize – the "cap and stem". This part contains the highest concentration of bioactive substances such as beta-glucans and triterpenoids.

Hot water extraction 1:1 means that we extract 1 kg of dried fruiting body to 1 kg of extract. This method makes polysaccharides and beta-glucans optimally available for absorption by the body. The cell walls of mushrooms consist of chitin (the same material as insect shells), which is difficult to digest. Through hot water extraction, these cell walls are broken down and the bioactive substances are released.

Result: Guaranteed beta-glucan percentages that are measurable and reproducible, without starch contamination from grains.

Cordyceps sinensis is unique in our range because we use mycelium biomass instead of fruiting body extract. This has a good reason: the original wild Cordyceps grows parasitically on caterpillars in the Tibetan highlands at 3000-5000 meters altitude and is extremely rare and expensive. The parasitic relationship means that the Cordyceps fungus eats the caterpillar from the inside and then forms a fruiting body that grows from the head of the mummified caterpillar – hence the name "winter worm, summer grass".

Our Cordyceps is organically cultivated in a fermentation tank under fully controlled conditions, with organic bean meal as fermentation substrate (no caterpillars!). The mycelium that grows this way has an exceptional profile of bioactive substances:

- Arabinoxylans: 240 mg/g (highest of all mushrooms)
- Glycoproteins: 322 mg/g (combinations of proteins and polysaccharides)
- Ergosterol: 68 mg/g (provitamin D2)
- Adenosine: ≥0.25% (unique nucleoside, guaranteed percentage)
- Mannitol: ≥8.0% (natural sugar alcohol)
- Polysaccharides: ≥5.0%

This profile is unique to Cordyceps and justifies the use of mycelium biomass. Of course, this product is also fully organically certified (CN-BIO-141 and NL-BIO-01) and encapsulated by ourselves in the Netherlands.

The Vegan Mushroom Mix BIO (formerly: Immuuncomplex BIO) is a carefully composed combination of 7 organic mushrooms in one capsule. Each capsule contains 75 mg of each of the following mushrooms:

- Cordyceps (Cordyceps sinensis)
